Leave Hoi An town behind and ride narrow lanes between green rice paddies and vegetable plots, with stops for photos while your guide explains the farming year in central Vietnam.

At a family workshop you see thin rice-flour sheets steamed over a fire and laid on bamboo racks to dry – the base of bánh đập (“smashed” rice cracker), a local snack. You are welcome to try making one yourself.

- Morning is cooler: from May to August the midday heat is strong, so the morning tour is the comfortable choice; bring sunscreen and a hat for the stops.
- Wear closed shoes – you walk on bamboo bridges and village paths.
- Bring small change in Vietnamese dong if you would like to buy a mat or rice crackers from the families.
- Weather: February to April is the most pleasant time to ride; May to August is hot, so morning and late-afternoon tours are more comfortable; from October to December heavy rain and floods are possible, and tours may be moved to another day.
